Turkey Lettuce Wraps

Ingredients
- 1 pound lean ground turkey
- 1 tablespoon vegetable oil
- 1 small onion, diced
- 2 large garlic cloves, minced
- 1 teaspoon freshly grated ginger (or 1/2 teaspoon ginger powder)
- 1 bell pepper, diced
- 1 tablespoon soy or tamari sauce
- 2 tablespoons Fish Sauce (Red Boat is our favorite)
- 1 teaspoon sesame oil
- 2 teaspoons rice vinegar or distilled white vinegarÌý
- 1 pinch red pepper flakes, optional
- 2 green onions, sliced thin
- salt, to taste
- ground black pepper, to taste
- fresh lettuce leaves (romaine, iceberg or butter leaf)
Directions
- Heat oil in large pan on medium high heat.
- Add onion, garlic and ginger, and cook until translucent.
- Add ground turkey and cook for about 3 minutes or until lightly browned.
- Add soy sauce, fish sauce, sesame oil, rice vinegar, red pepper flakes and combine with turkey meat.
- Add bell peppers and green onions and cook for about 5 minutes or until everything is combined well and turkey is cooked through.
- Add additional salt and pepper to taste.
- Serve the filling scooped into lettuce leaves.
