Chicken Jennifer

Total Recipe Yield: Serves 8 if you use 6-8 chicken breasts.
Portion Size: 1/2 to 1 chicken breast per person

Ingredients
- Chicken breasts (6-8)
- 1-1.5 bottles of regular or gluten free soy sauce
- 1-2 white onions (not the sweet kind) - sliced
- Sliced mushrooms (I use white but you could probably use others)
Directions
- Slice the onions and put some in the bottom of the crock pot.
- Put the chicken breasts on top of the onions.
- Put the rest of the onions on top of the chicken breasts.
- Put the sliced (and rinsed) mushrooms on top of the onions and chicken.
- Pour the bottle(s) of soy sauce over everything.
- Cook in the slow cooker. I usually set it for 6 hours.
- Serve with rice and broccoli. It’s even better as leftovers the second day when the sauce soaks in. You can also add other things like canned water chestnuts - there’s really no right or wrong way to make it! Enjoy!

"Growing up, my stepfather made something called “Chicken Alice” (pronounced “A-lease”) that always sounded very fancy. When I got older, I asked him how to make it and laughed at the simplicity.
